The team

The laboratory team consists of seven people, of which three are oenologists and partners at SAS OENOLYSE.

These three oenologists, all from winegrowing families, each have specific expertise, and greatly complement one other’s skills.

 

Jérôme


Jérôme DUFOUR is a State-certified Oenologist, graduating from the Faculty of Pharmacy in Montpellier in 2001.

With a wealth of experience in production (Bordeaux, Côtes du Rhône, Australia), and having met Daniel PERALDI in 1998, he joined the laboratory in 2003 with an objective to valorise his savoir faire alongside the winemakers of Provence.

His fields of expertise include:

- Consultant Oenologist

- Tasting and creating blends

- Regional specialist in viticulture with the expertise to address specific points or to offer global support in the vineyard.

Fabien DEGIOANNI

Fabien DEGIOANNI is a State-certified Oenologist, graduating from Reims University in 2001.

Fabien gained experience in Champagne where he practised as a consultant oenologist, and in Eastern Europe where he worked as a technical advisor.  In 2004 he was recruited by Daniel Peraldi and integrated into the laboratory where he focuses on imparting his knowledge to the winemakers of Provence.

His fields of expertise include:

- Consultant Oenologist

- Tasting and creating blends

- HACCP and hygiene audits

- Advice on the production of sparkling wines and wine-based products.

Isabelle MOUGENEL 

Isablle Jaoul Mougenel obtained her Oenology Degree in 1986 at the University of Toulouse, and joined the Daniel Péraldi laboratory in 1988.

It was, therefore, alongside Daniel Péraldi that she gained her professional experience, and together they developed the quality aspects of the laboratory which lead to COFRAC accreditation in 1996.

She is responsible for ensuring the quality of the results obtained and forms a link between the laboratory and the oenologists in the field.  Her job titles are:

Emmanuelle HENRY

Graduating with a DUT (two-year technical diploma) in Chemistry, Emmanuelle Henry first gained experience in quality control in the pharmaceutical sector, then in the treatment of effluent water, and finally in the food processing industry.

She joined the team at the Daniel Péraldi laboratory in 2007, and is involved in analysis, implementation of the quality system within the laboratory, and in management of the laboratory equipment. Her job titles are:

- Metrology Manager
